Albany Ale: How Was 1700s Brewing Structured?

More books in the mail today. Books on colonial American economics – trade and agriculture. As Craig pointed out the other day, the last third of the 1600s and the first two thirds of the 1700s is the last bit of the story of Albany ale and associated Hudson Valley brewing that we have been looking at though he has an excellent post on the big picture. Happy, then, was I to find the following passage in 2002’s Merchants & Empire: Trading in Colonial New York by Cathy Matson:

Brewing beer, on the other hand, was a ubiquitous household undertaking and could be expanded to export production with readily available local commodities. Females throughout the countryside were probably taught at an early age how to brew for household consumption, but New York’s demand for publicly sold beer grew steadily as well. The earliest brewing houses were owned by the distillers De Foreest and Van Couvenhoven. Soon, merchant families such as the Beekmans and the Gansevoorts also brewed beer for public sale. But by the 1730s, families that ran taverns or inns owned most breweries, as in the case of Nicholas Matteysen and John Hold. Moreover, since beer was cheaper than distilled spirits, and increasingly identified with the tastes of the “lesser orders,” its production dispersed over time into the various neighbourhoods, where brewer-tavernkeepers also dealt directly with rural producers for hops, barley, and containers.

This description of production is consistent with the 1810-11 Vassar log, sibling to the mid-1830s one, that shows local farmers supplying casks, hops and grain. This makes sense as there was no great technological shift between 1700 and 1800 that should have shifted patterns of production – especially in a region still struggling with the difficult economic aftermath of the Revolution. Unfortunately, wide-spread small scale commonplace activity tends not to get recorded so we get only glimpses as in diaries from 1670 and 1749.

So, I am off to Albany tomorrow for a couple of attempts to find sources on the topic and to talk with Craig. Do they still have card catalogues? Someone must have done a study of the economics of upstate NY’s farmers between the exit of the Dutch empire and the convening of the Sons of Liberty. Surely, there is an economic argument or at least observations being made that describes the British era as not simply the prelude to independence. We’ll see.

Albany Ale: In 1670 The Best Ale Was Wheat Ale

You ever wonder why the reference you find after two and a half years took two and a half years to find? Look at this:

Their best Liquors are Fiall, Passado, and Madera Wines, the former are sweetish, the latter a palish Claret, very spritely and generous, two shillings a Bottle; their best Ale is made of Wheat Malt, brought from Sopus and Albany about threescore Miles from New-York by water; Syder twelve shillings the barrel; their quaffing liquorsare Rum-Punch and Brandy-punch, not compounded and adulterated as in England, but pure water and pure Nants.

This is a description of the drinking habits of the Dutch population of the Hudson Valley of New York from page 35 of a journal published in 1670. It was written by Daniel Denton and was called A Brief Description of New York: formerly called New Netherlands, with the places thereunto adjoining. So in addition to the 1649 legal ordinance barring brewing with wheat during a crop collapse and the 1749 reference by a traveling scientist to the malting of wheat, we have not only confirmation that wheat ale was brewed but it was the best to be had. The description by Denton is particularly trustworthy as it is incidental to other cultural references about the Dutch, particularly about their smoking and drinking habits. There is another reference to beer in his writing, too, that is quite revealing. It sits in this passage about the freedoms being enjoyed in the newish New York:

Here those which Fortune hath frowned upon in England, to deny them an inheritance amongst their brethren, or such as by their utmost labors can scarcely procure a living—I say such may procure here inheritances of lands and possessions, stock themselves with all sorts of cattle, enjoy the benefit of them whilst they live, and leave them to the benefit of their children when they die. Here you need not trouble the shambles for meat, nor bakers and brewers for beer and bread, nor run to a linen-draper for a supply, every one making their own linen and a great part of their woolen cloth for their ordinary wearing.

There you go. Freedom loving prosperous newly absorbed New Yorkers making their own wheat ale and bread from good malt grown around Albany over 100 years before the American Revolution.

So who is going to brew some up? Are there any mid-1600 Dutch guides to household management that include brewing techniques?

Pass Peter’s Pewter Pottle Pot, Please!

In my quest for objects out of which to drink ale, I have a 1940s ceramic part pint, an 1840s pewter quart pot and have declared 2013 the year of the 1700s etched ale glass. But, what ho! Something came before my eye today that I had not only never seen before but never had heard of – the pottle! Not an actual pottle but just the concept.

As you can see, that is archaic word for a half-gallon. The image above is a handy illustration from the entry for “Ale” in 1725’s smash best selling book Dictionaire oeconomique: or, The family dictionary. Containing the most experienced methods of improving estates and of preserving health, with many approved remedies for most distempers of the body of man, cattle and other creatures…. You will have to excuse me for deleting more than half the title but you get the hint. But now you know that there are 16 pottles to a firkin. That’s knowledge, baby.

There are a few references to pewter pottle pots on Google mainly referencing legal cases where a whole bunch of things are listed as being stolen or being in a will. In 1267, it is recorded in The Court Rolls of Ramsey, Hepmangrove, and Bury that a number of naughty brewsters of Ramsey were brought before the rather ripely named William De Wassingle – who I have no doubt was called “Assingle” behind his back – to pay fines and pledge security. Earlier in the day there was a far more interesting case which is recorded as follows:

You wag, Assingle. Anyway, in the brewster cases on that day, the security pledged against failure to pay the fine included many pottles. Four centuries later but still over 350 years ago, in 1659, the court heard an action of trover and conversion brought against one Gervase Maplesden by one Gabriel Beckraan for a number of things including one pewter gallon pot, one pewter quart pot, one pewter pottle pot and one pewter pint pot. Battlin’ pewterers action! Nothing like it.

But where are the pottle pots now? Not only can I find none on the internets for sale but none even pictured. Can you send an image to one of these massive drinking vessels? Have you ever seen one?

“…107 Tons Of Beer And Six Tons Of Canary Wine…”

Later this summer, we are spending a few days in Baltimore. Looking forward to it in many ways including things beery… including brewing history. We know a bit about Baltimore and beer already. See, in the 1620s there was a brewery at the first Lord Baltimore’s colony at Ferryland, Newfoundland. And in their voyage of 1633-34, the Ark and Dove apparently carried 107 tons of beer and six tons of Canary wine to what would be the second Lord Baltimore’s colony at St. Mary’s City, Maryland. It would appear likely, then, that the pattern of settlement in the latter might include replication of provision seen in the former for that necessity for the community, brewing.

But can I find a list of the ships’ stores? Not a chance. There is a book The Flowering of the Maryland Palatinate from 1961 that appears to have a reference at page 15. There may even be a list of provisions in this article from the state’s historical society. But Lord Goog is either not so wicked or has not yet found a way to make a buck at displaying these full documents to me. Drag. You would think that lists of ship’s stores from early modern period trans-Atlantic sailing would be the hot item of the internets. The 1670s evidence is there for northern Canada. But Maryland? No. I blame Gen Y. I often do. I know it is easy but that’s why blaming them makes so much sense.

Book Review: But Are These Really Beer Books?


ganse1Beer books. I have read enough of them but they are not the whole extent of the books I read related to my interest in beer. One of the most interesting things for me about my interest in beer is how is it woven though the community and through time. On top up there is my recently acquired copy of 1969’s breakout best seller The Gansevoorts of Albany: Dutch Patricians in the Upper Hudson Valley. It does appear on Google books but not much of the text is available. Below that book us the second edition of The Visual Display of Quantitative Information by Edward Tufte. I am hoping each will be, in its way, a book about beer or at least a book that explains how we can think about beer.

First, the Gansevoorts. The most amazing thing about this family for our present purposes is that they gave up brewing in the early 1800s after the best part of two centuries of brewing… in North America. There is a lot to learn about the context of how brewing began and has continued for around 380 years in the capital city of New York state but the main thing to understand is that when the British finally took over the Dutch colony in 1674, it did not remove the population. In a way, it is like a mini-Quebec in that, through the Dongan Charterof 1686, the people of Albany were allowed a level of self-government that continued its Dutch political culture. In roads into that were only made after the French and Indian War of the later 1750s which led to the fall of New France. Interestingly, the indications I have seen of a indigenous strong Dutch wheat beer seem to fade along with that political culture replaced in the first decade of the 1800s with the ranges of small to XXXX ales more in line with the Yankees of neighbouring and expanding New England culture that lived on until swamped in turn by later German immigrants and the advent of large scale lager production. Earlier, under that cultural protection, the Gansevoorts can be traced back to the 1650s when a brewer had a daughter whose husband took up the brewing trade himself, passing the business on to their son, whose beer based position and wealth allowed his sons to prosper and lead the Revolution… and to run the brewery until it was demolished in 1807.

We have data. So much data. But it is out there in jangled family trees, in newspaper ads and in boxes on archive shelves which have remained unopened for years. How to find it all and how to put it into some order? I have an idea for an interactive timeline that effectively displays what otherwise could sit on a wiki like this. But I need help. Hence Tufte. I am thinking of his commentary on the 1869 graphically illustrated map of Napoleon’s doomed march into and out of Russia. Except it would be the Hudson River Valley and it would be about almost four centuries of of beer rather that one really poor military campaign. Something of a cross between that and the schematic diagram of the London Undergroundmight work. Maybe.

Beer books? Two wonderful books and each can tell me plenty about beer or about thinking about beer at least.

My Most Interesting Discovered Drinky Thing Of 2011

This has been a year that I have thought about history a bit more than others. Canadian history for the most part. We make great mistakes in considering our own time on this land. We dismiss the First Nations. We pretend that Canada began when the current constitution was signed in 1867. But Canada has been populated for thousands of years and Europeans have been nibbling at the edges for the best part of a millennium. Vikings lived in northern Newfoundland back then. In 1674, the Hudson’s Bay Company was importing malt and hops into the Arctic. But this year I came across another couple of fact that I found most interesting in this report. It’s in the bibliography:

ROSS, L. (1980) – 16th-Century Spanish Basque Coopering Technology: A Report of the Staved Containers Found in 1978-1979 on the Wreck of the Whaling Galleon San Juan, Sunk in Red Bay, Labrador, 1565. Manuscript Report Series.Ottawa. 408.

See that? 1565. And the other thing? Staved containers. I have found West Country seasonal fishermen recorded as importing malt as part of their seasonal businesses packing salt cod for the Iberian market in the 1630s. How far before that did the practice occur? Peter E. Pope in his book Fish into Wine: The Newfoundland Plantation in the Seventeenth Century explains that there was a regular practice of travel each spring from Elizabethan England to what is now eastern Canada for this fishing trade. It is inconceivable that these men in the 1500s did not ship malt, too. That they did not pack drinks in casks for the voyage here and back, too.

But where are the records? Where are the records for Albany ale for that matter like Taylor’s brewing books? Or early Ontario beer? That’s the thing. The records. In overseeing the OCB wiki, it has already become a little bit of a jostle over which record is the one to be trusted. Yet there is the tantalizing possibility that in the later half of the 1500s on cool spring days on the Newfoundland shore, men made beer for themselves many decades before the first beer was thought made in this country. There is a phrase for those whose families went on in places like Ferryland to shift to year round residence: masterless men. Don’t you think they might have made themselves a little beer?

That Odd Tension: Wishing To Find Any Answer But Beer

That’s footnote 27 at page 134 of New Sweden in America which is exhibiting something between a quibble and a theme. It’s actually in a chapter in that book, “Lenape Maize Sales to the Swedish Colonists: Cultural Stability during the Early Colonial Period” by Marshall Joseph Becker in which there is a lot of very interesting stuff. For example, in 1654, there was an effort to expand trade products with the Lenape, the local nation, from mainly corn to hops as well. Like the colony, it was a flop but who knew the colonial Swedes were gathering hops in the mid-17th century Delaware. There’s more. In another document, the same Becker shows that New Sweden’s outpost at Tinicum Island had a brewhouse: warning pgf and elsewhere we read that

Swedish women in Delaware made beer not only from pompions (pumpkins) and corn but persimmons and watermelons.

So, with all that evidence that there was plenty of beer and brewing in colonial New Sweden during its existence from 1638 to 1660 why is there a suspicion that the brew kettle was being used for something other than producing beer? I haven’t cataloged it but, just like a Shakespeare play presented in Victorian accent, there seems to be a tension over time, in this case a presumption that beer was not as pervasive in northern western culture prior to a certain point in industrialization as we also seem to know it was. It may be that we don’t want to know or that we can’t take on just how much was drunk by how many. The more I read about these earlier points, however, the more I think I should be surprised to find a sober official, a dry town.

Was This The Earliest Brewing In English Canada?

Sneath, Pashley and Rubin all mention the 1600s brewers of New France – Hebert (1617), Ambroise (1646) and Talon (1670). But I just came across this reference in a footnote in the Minutes of the Hudson’s Bay Company, 1671-1674, published by Toronto’s Champlain Society in 1942, describing payments being made on 16 February 1674 for goods supplied to the ships of the Hudson Bay company:

John Raymond, “By Severall quantities of Ship Beere at 40s p. Tonn Strong beere at 12s, 9d a barrell & Harbor Beere at 6s 6d p. barrell with Malt & Hopps dd. Capt. Gillam, Morris and Cole”, £ 79.

A few months later, a committee of the Hudson Bay Company on 6 July 1674 directed payment to the same John Raymond £ 30 on account of “”Beer and Malt. dd. on board the Prince Rupert.” These items appear among a long list of payments for other necessary goods for taking aboard the ships Prince Rupert, Messenger and Employ. You will see in footnote 2 to this post on a blog by Norma Hall subtitled “Northern Arc: the Significance of Seafaring to Western Canadian History” that these three ships were sailing between England and Hudson Bay in the first half of the 1670s. The Prince Rupert and Messenger, at least, over wintered.

There are loads of interesting questions and observations from these passages from the Minutes of the Hudson’s Bay Company, 1671-1674 including why are they shipping malt and hops separate from barrels of beer. If these ships overwintered and carried malt and hops it is pretty obvious that they must have been brewing. We know the British brewed on ships in the Arctic in 1852 so why not in 1674? But also – what is “harbor beer”? It costs about half of “strong beer” and we know from Gate’s work on Kingston that in 1825 “small or ship beer” was being sold in Kingston. But most of all the question is this – was this the first brewing of beer in English Canada? Or did other earlier over wintering ships brew, too?

Oh, For A Mug O’ Fern Ale To Keep Strangers Away

Ron got me thinking. He was making fun of something written by Horst Dornbusch today, the “man of a million unfounded claims,” when I noticed something about pale ale coming into being around 1800 when coke was first used. I knew that was wrong so I started digging around for references to straw dried pale malts. There is something about the lack of industrialization that makes for a lack of a record of things and I thought the Coke Makers Association of The English Midlands may well have diddled the books, created history around their own inventions. And there it was… sorta… in The London and Country Brewer from 1737:

Next to the Coak-dryed Malt, the Straw-dryed is the sweetest and best tasted: This I must own is sometimes well malted, where the Barley, Wheat, Straw, Conveniences, and the Maker’s Skill are good; but as the the fire of the Straw is not so regular as the Coak, the Malt is attended with more uncertainty in its making, because it is difficult to keep it to a moderate and equal Heat, and also exposes the Malt in some degree to the Taste of the smoak.

OK, the pro-coke lobby is firmly entrenched but the quotation is from 63 years before Horst so that is worth noting. But then I notice this comment further down page 14:

The Fern-dryed Malt is also attended with a rank disagreeable Taste from the smoak of this Vegetable, with which many Quarters of Malt are dryed, as appears by the great Quantities annually cut by Malsters on our Commons, for the two prevalent Reasons of cheapness and plenty.

Interesting. Commonly used and rank. The author likes his descriptors of bad tasting: “rank disagreeable Taste” is joined by “most unnatural” and, my favorite, “ill relish.” Yet there is it – fern beer. What was fern ale like? We spend so much time hybridizing a new hop or injecting a new chili pepper extract into our beers we have forgotten the humble fern, maker of widely consumed if rank ales. In 1758’s Volume 3 of A Compleat Body of Husbandry by Thomas Hale, a bit more hope is given to the prospects for the taste of a fern ale:

The amber may be straw dried, but ’tis not nearly so well. As to wood and fern they are used in some parts of the kingdom, and custom makes the people relish the beer brewed from such malt; but to a stranger there is a most nauseous taste of smoak in it.

At least the locals liked it.

Lord Goog in the end gave up what I was looking for. In an edition of A Way to Get Wealth by Gervase Markham from 1668, a book first published in 1615 or about 200 years before the start date picked by Horst, we have an opinion on the preference for straw… and not just any straw:

…our Maltster by all means must have an especial care with what fewel she dryeth the malt; for commonly, according to that it ever receiveth and keepeth the taste, if by some especial art in the Kiln that annoyance be not taken away. To speak then of fewels in general, there are of divers kinds according to the natures of soyls,and the accommodation of places-in which men live; yet the best and most principal fewel for the Kilns, (both tor sweetness, gentle heat and perfect drying) is either good Wheat-straw, Rye-straw, Barley-straw or Oaten-straw; and of these the Wheat-straw is the best, because it is most substantial, longest lasting, makes the sharpest fire, and yields the least flame…

Look at that. We are in a different world compared to both today as well as the mid-1700s. Back to an agricultural age. “She” is the maltster. And the specific qualities amongst four classes of straw are known and ranked. After these light grain straws come fen-rushes, then straws of peas, fetches, lupins and tares. Then beans, furs, gorse, whins and small brush-wood. Then bracken, ling and broom. Then wood of all sorts. Then and only then coal, turf and peat but only of the kiln is structured to keep the smoke out of the malt.

Why? The whiz kids at Wikipedia tell us that:

In 1603, Sir Henry Platt suggested that coal might be charred in a manner analogous to the way charcoal is produced from wood. This process was not put into practice until 1642, when coke was used for roasting malt in Derbyshire.

So, coking turns out an early industrial practice that only first considered halfway through the life of Gervase Markham who lived from 1568 to 1637 and only applied to malt after his death. Coke is used to perfect – but not create – pale malts.

Pale malts and pale ales would have been around for some time well before 1600 even if in the effort to make them some became, as Markham writes at page 166, “fire-fanged.” I am sure that a fern fire-fanged ale may well have been an ill relish. But what of those whose custom made them love them all the same? Right? It’s a style just waiting to be reborn. Right? Markham would have none of it. At page 181 he states:

To speak then of Beer, although there be divers kinds of tasts and strength thereof, according to the allowance of Malt, hops, and age given unto-the fame; yet indeed there can be truly said to be but two kinds thereof, namely, Ordinary beer and March beer, all other beers being derived from them.

Got it? Fern ale is not a kind of beer, just a taste. There are two kinds of beer, ordinary and March. Everything else is showing off.

America’s Communalist Christian Foundation

I have been reading a lot this winter. Lots and lots of histories – mainly US but plenty about the founding of Upper Canada, too, though those texts are fewer and far between. Right now, I am reading John Winthrop: America’s Forgotten Founding Father by Francis J. Bremer, a book about the first Governor of the Massachusetts Bay colony founded in 1630 a decade after the Pilgrims hit Plymouth Rock. It is a great ride, covering his grandfather’s birth in 1480 to his own death in 1648 and contextualizes his life in the ebb and flow of the state’s regulation of religious practices from pre-Luther to the lead up to the English Civil War, also the name of an excellent song by The Clash. But this is the key bit. The middle bit to his sermon to his fellow passengers on the event of their departure to New England from the Old World:

… for wee must Consider that wee shall be as a Citty upon a Hill, the eies of all people are uppon us; soe that if wee shall deale falsely with our god in this worke wee have undertaken and soe cause him to withdrawe his present help from us, wee shall be made a story and a byword through the world, wee shall open the mouthes of enemies to speake evill of the wayes of god and all professours for Gods sake; wee shall shame the faces of many of gods worthy servants, and cause theire prayers to be turned into Cursses upon us till wee be consumed out of the good land whether wee are going…

See that? The new order of New England shall not only be a candle on a stand rather than under a bushel (basket) – but if they were to screw up “wee shall shame the faces of many of gods worthy servants.” That is a heavy burden but one that acts as a prophesy, reaching to today from 381 years ago. What was the way to avoid having “prayers to be turned into Cursses upon us”? Worship of those other gods, pleasures and profits. And also failing to make “others Condicions our owne rejoyce together, mourne together, labour, and suffer together, allwayes haveing before our eyes our Commission and Community in the worke.” Pinkos! I see Pinkos! Pinkos like me!

Next time you hear about how American was founded on faith, you may want to agree in part and note that what sort of Christian by which it was founded.
